If you are a fan of apple pie you need to try these Apple Pie Overnight Oats! Even if you’re not a huge apple pie fan, I bet you will still like these!

I’ve used spices which are commonly used in an apple pie including cinnamon, nutmeg and allspice as well as vanilla. I chose to use a granny smith apple as that is the type of apple most often used in cooking and apple pies. Coconut yoghurt adds a really nice creaminess, reminiscent of dessert or pudding. 

 

What are overnight oats?

Well they’re oats mixed with liquid, usually milk. You can then add pretty much any fruit, nuts, seeds etc you like and then put in the fridge overnight to set.

 

I also like to put coconut yoghurt in mine as it creates a really nice creamy consistency, it’s also high in fat making it more filling and of course full of probiotics which is great for gut health. You can replace coconut yoghurt for any other type of yoghurt (just make sure you get dairy free if you are vegan or lactose intolerant). If you just aren’t a fan of yoghurt for whatever reason or you don’t have any and you really want to make overnight oats now, it’s no problem to just leave it out too. If you do omit the yoghurt be sure to add a bit more milk to the oats to make up for it.

 

As well as coconut yoghurt I like to add chia seeds. Also totally optional. I use them because when mixed with liquid they expand and sort of bind everything together and make for a more pudding like texture. They also have some pretty awesome health benefits including high in omega, fibre and protein while being low in carbs. 

 

The rest you can fairly easily customise. I chose to make apple pie overnight oats as it’s really easy to get all the familiar flavours of an apple pie in. I tend to have most if not all of the ingredients on hand all the time, and it kind of means you get dessert for breakfast! But of course this breakfast is not hot like an apple pie is. However you can heat them in the morning just before eating if you like for around 40 seconds in the microwave. But you really don’t need to. 

 

Why are overnight oats great?

Well, where do I start. Firstly, they are generally pretty healthy. Obviously that won’t be the case if you start throwing in lots of sugar or fruit juices. But if you just stick to oats, fresh fruit and some nuts and seeds you’ll be getting a lot of goodness in for breakfast. 

They’re super filling, and as mentioned above even more so if you add things like chia seeds or yoghurt or even nut butters.

They’re easy to make. Literally all the ingredients just get mixed together and then it goes in the fridge.

It’s awesome getting up in the morning and not having to think about what to have for breakfast, especially if you’re in a rush! They’re just there waiting and ready.

 

What should I make my overnights in?

I always use a jar. You can also use any old container or if you aren’t transporting your breakfast then just a bowl is good too. 

I’m a fan of using a jar for a few reasons – they’re super easy to grab in the morning and take to work without any spillage. They’re easy to clean – just pop in the dishwasher if you have one. They’re clear so you can easily see if all the ingredients are mixed in properly. Jars are a great way to upcycle.

I used an old coconut yoghurt jar (can you tell I’m obsessed with coconut yoghurt?). Any old jar will do, you don’t need anything fancy. If you choose to use a jar you will need one with at least 300g capacity. 

 

One thing I will say is that although this is a healthy, nutritious breakfast it isn’t particularly low carb. One serve will be around 44g of carbs, depending on brands you use. I used Vitasoy protein plus soy milk as it’s lower carb with no added sugar, Harraways rolled oats and Cathedral Cove coconut yoghurt.

  • Put all ingredients into a jar, breakfast bowl or container.
  • Stir until all the ingredients are well combined. If you’re like me and used a jar only just big enough, you will need to do this very carefully!
  • If using a jar or container, put the lid on, otherwise cover with clingfilm or similar.
  • Put into the fridge and leave overnight, and get excited for breakfast to be ready for you in the morning!
