I love breakfast! There’s a lot of discussion around whether or not breakfast is actually a good thing or if it’s better to fast until early afternoon. If you ask Google you’ll get so many differing opinions! But I just do what I want to do – I like eating breakfast so I’m going to keep eating breakfast, I just make sure it’s healthy! I also enjoy mixing it up and not just having the same thing everyday. A smoothie bowl is a great healthy,vegan breakfast packed full of vitamins, including lots of vitamin C, nutrients and antioxidants. And a little something I found out is that berries are also known to potentially help with insulin resistance – amazing! Just in this one smoothie bowl there’s about 4 serves of fruit and veges. Due to so many processed foods which are now on the market, people are consuming far less fruit and veges than they should be which means they aren’t getting the nutrients their bodies need. So this smoothie bowl is definitely going to help with that! You can also mix it up really easily just by using different berries or even different fruit entirely. The toppings can be any type of seeds or nuts, or coconut chips as in my recipe or even cacao nibs. Just try to stay clear of dried fruit as it’s often loaded with added sugar. I love the peanut butter drizzle as I’m a huuuge fan of peanut butter and it adds a little decadent touch. You can leave it off if you prefer or try other nut butters! The LSA (Linseed, sunflower seeds and Almond) is a great little addition which you can’t even taste but is going to give you some extra nutrients like protein, fiber and omega-3 which is great for keeping you full, keeping blood sugar level on track, and lowering cholesterol. The beetroot powder adds to your daily intake of veges and of course it’s a really easy way to get more vitamins in. And cinnamon, well I just like cinnamon. All of these powders are completely optional, feel free to omit or replace.

- Slice the banana for the topping and place on top of the smoothie in 1 or 2 lines at one end of the bowl.

This can either make 1 large serve or 2 smaller serves, If you make it for 2 people just increase the toppings accordingly.
