I am a self-confessed peanut butter fiend. It’s no secret I’m kind of obsessed with the creamy peanut spread, and luckily this recipe for homemade peanut butter is incredibly easy and it only contains two ingredients – peanuts and salt. No nasty additives or preservatives, and no unnecessary sugar! My husband and I go through jars of peanut butter like there’s no tomorrow, so having this recipe and being able to make my own in 5 minutes is perfect.
Peanut butter is not only great because it tastes delicious, but peanuts are also really good for you and relatively low in carbohydrates! They contain lots of good fats which are great for your heart health and cholesterol levels, they’re high in protein which helps fill you up but is also vital for bone and muscle health, and they’re high in fibre for healthy digestion. So, you know, you don’t need to feel guilty about dunking a spoon into your peanut butter and eating it straight out of the jar…
Now, if you’re looking for some recipes where you can use your homemade peanut butter I recommend trying my low carb Peanut Butter Brownie Mug, Peanut Butter Cookies, Peanut Butter Cups or even my Stir Fry Satay Veggies. (I did tell you I had a slight peanut butter obsession!)
How do I make my own peanut butter?
It’s so easy! You will need to use roasted peanuts as this produces a much nicer flavour. You can either buy pre roasted peanuts or roast your own by simply laying the peanuts on a baking tray in a single layer and baking at 160℃ for about 15minutes. Then all you need to do is put the peanuts into a food processor with some salt and blend away. It will gradually turn into peanut butter as you blend, starting out as more of a crumb and eventually turning into a smooth, creamy texture. If you don’t want an extra thick peanut butter just blend it more. The more you blend the more oils will be released and the runnier it will be.
What kitchen tools do I need?
The only thing you need is a food processor or a good blender.

- If you have just roasted your own peanuts, wait for about 5 minutes for them to cool slightly before putting them all into a food processor (you can also use a powerful blender or NutriBullet). If you are using pre-roasted peanuts they can go straight into a food processor/blender.
