This trio of Low Sugar cocktails are perfect for summer. They are full of fresh fruit and are super refreshing, plus they look so pretty!
All 3 of these cocktails only contain natural sugars from the fruit which is in them, no refined sugars. Using whole fruit rather than just syrups or fruit juices also means these cocktails have some pretty good health benefits! They’re full of vitamins, particularly Vitamin C, and antioxidants!
They also all use white rum as the alcohol. This means if you want to try all 3 you don’t need to fork out on 3 different types of alcohol – just grab the one bottle of white rum! I used Bacardi but you can use any brand you like.
Each recipe makes one cocktail, feel free to double or triple to make more serves!
So let’s talk about the cocktails…
Low Sugar Cocktails: Pin֮a Colada
A pin֮a colada is the ultimate beachside, summer time cocktail. You drink it and instantly feel like you’re on holiday. So this cocktail is perfect for summer! But let’s be honest, it’s great any time of year!
The traditional recipe is made with 1 part white rum, 1 part coconut cream and 3 parts pineapple juice. Pretty simple. Mine has stayed quite close to the original with the main difference being the addition of whole pineapple pieces blended up, as well as pineapple juice. Using the fruit instead of just the juice makes this pina colada slightly more thick and creamy and means you’re also getting some more health benefits from the fruit such as fibre. You can use either fresh or tinned pineapple. If you go with tinned, get pineapple in juice rather than syrup, that way you’ve also got your pineapple juice and don’t need to buy a whole bottle of it.
I’ve also added some ice cubes because no one wants a warm cocktail!
The pin֮a colada is the easiest to make of these 3 cocktails as you literally put all of the ingredients into a blender and blend until everything is combined, then pour into a glass.
Decorate with some pineapple pieces, a cute cocktail umbrella and reusable straw and you’ll be feeling those holiday vibes in no time!

Low Sugar Cocktails: Blackberry Mojito
My twist on a classic mojito is probably the most refreshing of my 3 low sugar cocktail recipes as it’s made with lots of mint.
A classic mojito is made using white rum, lime, mint leaves, sugar and soda water. I didn’t want to include any added sugars so took the sugar out and replaced it with liquid sweetener. I just used ¼ tsp of Sugro Max Liquid Concentrate and found that to be enough for me, but depending on what brand of liquid sweetener you use and how concentrated it is you may find you need a bit less or a bit more, or you can leave it out completely.
To make this blackberry mojito rather than a standard mojito, I of course had to add blackberries! I actually had originally intended to make a watermelon mojito. However, here in New Zealand we have a bit of a melon shortage as we import mostly from the United States and COVID means that’s not so easy. So I thought blackberry and mint would work quite well together.
Frozen blackberries work best for this drink. They’re cheaper than fresh, they’re frozen so your drink will automatically be cold and as they have water in them they blend up a bit easier.
The blackberry mojito is a little more involved than the pin֮a colada but don’t worry it’s still quick to make!
You need to blend up the blackberries with some water and lime juice until you have a really runny consistency, then strain that to remove as many blackberry seeds as possible, this makes a sort of blackberry juice. You could alternatively buy blackberry juice but I chose to use whole blackberries and make my own for the same reason I used pineapple in the pin֮a colada – more vitamins and fibre. Plus store bought juices are often loaded with added sugars so making your own means only natural sugars!
Add your homemade blackberry juice to a cocktail shaker along with white rum, mint leaves and aforementioned liquid sweetener and shake away. If you don’t have a cocktail shaker just give it a really good stir with your straw.
Pour into a tall glass, add ice cubes and top up with soda water. Decorate with mint leaves.
The colour of this one is so cool, a really nice dark rich purple which contrasts so well against the green of the mint!

Low Sugar Cocktails: Frozen Strawberry Daiquiri
This cocktail is the most dessert-like and will probably be favoured by those who aren’t huge drinkers. It’s quite sweet and so delicious, it looks really pretty and is a nice bright strawberry reddish pink!
A daiquiri is traditionally made with white rum, lime juice, sugar syrup and ice. So a strawberry daiquiri includes the addition of well, strawberries. And a frozen strawberry daiquiri is in the consistency similar to a slushy.
Like the pin֮a colada this one is also really easy to make as all the ingredients get thrown into a blender at one go and then blended up until you have a slushy like consistency. It will however likely take a bit of work to get it to that consistency as there’s not much liquid in with strawberries. This just means you will probably need to stop blending and scrape down the sides then blend again until it’s right, but trust me it’s worth it and only takes a couple minutes extra.
It is essential that you use frozen strawberries for this recipe. If you use fresh you won’t get that frozen dessert texture, plus it won’t be cold. It just won’t be the same at all. I used frozen strawberry slices which blended up a lot easier than whole frozen strawberries, so I recommend getting slices if you can find them.
Like the blackberry mojio, the original daiquiri includes sugar which I didn’t want to use, so I instead used liquid sweetener. Again, I used ¼ tsp but feel free to adjust to your liking. Strawberries are also quite sweet and one glass of this frozen strawberry daiquiri uses a cup and a half so you may even find you don’t want additional sweetness.
Once you’ve blended all the ingredients up and have the right texture, pour into a wider glass, a margarita glass works well if you have one. This cocktail looks super pretty decorated with a strawberry and slice of lime on the rim of the glass, but feel free to garnish and decorate however you like, or not at all!

Cocktail glasses – it’s up to you what you use, but I used a poco grande glass for the pin֮a colada (a large sort of tulip shaped glass with a stem and base), an ordinary plain tall glass for the blackberry mojito, and a margarita glass for the frozen strawberry daiquiri.

Cocktail umbrellas (optional)
